Introduction

Opened in 2014, Mingles has been named the “Best restaurant in Korea”, placed “Highest New Entry to Asia’s 50 Best Restaurants 2015” and “Rising star of Seoul ‘mingles’ Korean with European influences” by The World’s 50 Best. The chef Mingoo Kang trained under Martin Berasategui in San Sebastian, Spain, and Nobu in Miami and the Bahamas. Complementing the seasonally changing menu, not only wine pairing is offered, but also traditional liquor pairing.

Review

The food is a combination of European cooking techniques with traditional Korean ingredients, and I do not remember to have ever eaten so well for the price that this meal cost. At 80.000 KRW (£50) for the lunch menu, this could become my go-to place when in Seoul. The food is worth every single cent and is nearly a steal at the price you pay to experience one star Michelin food (there is no tipping culture in South Korea, meaning you actually only pay £50). I believe that even to those who less favor Korean cuisine, this is a great way of being introduced to local ingredients.  The menu is presented as multiple courses in the beginning, and in the end, serves a big traditional platter of Korean side dishes with rice. The side dishes are made from seasonable vegetables and show the abundance of variation when it comes to those in Korean cooking. The interior is very modern and casual, and one could easily forget that you are in a Michelin one-star restaurant. If you enjoy a more relaxed approach to dining, without constraints for attire, this will be the place for you. It will be interesting to see where the restaurant and chef develop from here in the future. Personally, I am convinced that he has a great future ahead of him.
